INGREDIENTS

1 packet Suzy Spoon’s Kale & Cauliflower Sausages

1 1/2 cup red cabbage shredded

1 1/2 cup raw/cooked broccoli

1 1/2 cup cherry tomatoes

1 1/2 avocado sliced

1 1/2 cup sliced red capsicum

1 1/2 cup sweet potatoes sliced

1 1/2 cup snow peas

1 1/2 cup kale/spinach

TAHINI & LIME DRESSING - makes 125 ml (1/2 cup)

Juice of 1 lime (approx 2 Tbls)

3 Tbls tahini

1 Tbls soy sauce

3 Tbls water

KALE & CAULIFLOWER BUDDAH BOWL WITH A TAHINI LIME DRESSING

METHOD

Cook your brown rice as per packet instructions. Heat a pan on medium heat with some olive oil, chop 2 sausages into 2cm chunks & add to the pan. Cook until brown all over and hot all the way through. At this stage you can cook any of the other vegetables you need to, pan fry, roast or steam. Add any vegetables you want cooked or raw.

TAHINI & LIME DRESSING

Combine the lime juice & tahini in a small bowl. Add the soy sauce & 3 Tbls of water and stir well. 

Add all ingredients into a bowl and drizzle over the tahini & lime dressing.
